This ap­pli­ca­ti­on note pres­ents a pro­of-of-prin­ci­­p­le stu­dy using a no­vel Jet De­­sor­­ber-en­han­­ced SICRIT®-mass spec­tro­me­try (MS) set­up to in­ves­ti­ga­te aro­ma for­ma­ti­on in real time. Marsh­mal­lows ser­ved as a mo­del to test this ca­pa­bi­li­ty due to their dy­na­mic che­mi­cal be­ha­vi­or and he­te­ro­ge­neous ma­trix du­ring roas­ting.
