Analyses
Flavorings are very popular as they give some extra taste to foods and beverages like pastries, ice cream, sweets, coffee, or tea. In this example, the HaVoc sensory system was used to investigate different cherry flavors from different manufacturers.
The analysis of different cherry-type flavorings showed significantly different volatile fingerprints which easily allow to a differentiation. Additionally drawing on statistical means like principal component analysis (PCA), HaVoc allows for an easy and automated clustering of different flavorings.
