Fla­vorings are very po­pu­lar as they give some ex­tra tas­te to foods and be­ver­a­ges like pa­stries, ice cream, sweets, cof­fee, or tea. In this ex­am­p­le, the Ha­Voc sen­so­ry sys­tem was used to in­ves­ti­ga­te dif­fe­rent cher­ry fla­vors from dif­fe­rent ma­nu­fac­tu­r­ers.

The ana­ly­sis of dif­fe­rent cher­ry-type fla­vorings show­ed si­gni­fi­cant­ly dif­fe­rent vo­la­ti­le fin­ger­prints which ea­si­ly al­low to a dif­fe­ren­tia­ti­on. Ad­di­tio­nal­ly dra­wing on sta­tis­ti­cal me­ans like prin­ci­pal com­po­nent ana­ly­sis (PCA), Ha­Voc al­lows for an easy and au­to­ma­ted clus­te­ring of dif­fe­rent fla­vorings.

Cha­rac­te­riza­ti­on of cher­ry-type fla­vorings
